Is it possible to mutate an RNA into a DNA molecule in-vitro?

We have to ability to convert RNA into DNA and it is called RNA reverse transcriptase. The problem is that just converting RNA into DNA really does nothing and leaves the product open to many mutations as you are always working of a single strand of RNA. HIV is famous for using this method of converting RNA into DNA to be used by the human cells.
